In my headcanon, Ashley is not "full blown bi". She simply doesn't know it yet. Yes, that happens: sometimes a person doesn't know about his or her sexual allignment for most times of his/her life until a certain event kicks in.
In my case, Ash is about to find out she -also- enjoys company of another woman. She's pretty much confident of her sexuality, so she's kinda eager to try out new things. Still: Ashley loves Shepard; he's the love of her life. She may even go into a polyamorous relationship (uhh ...) if Shepard likes that, but only with someone Ashley also trusts and loves.
Now how does it work with the Ash we know from ME1? She seems to be disgusted by the idea to have a threeway love with Shepard and Liara.
Easy: Ash didn't know about her allignment yet PLUS she simply wasn't ready to do it. Also she didn't like Liara that much, not to speak of trust. The idea to share Shepard with a never aging Asari ... I believe Ash wouldn't mind another woman at a later point. Gianna Parasini anyone? Since I can't simply "steal" Roxanna Pierce from Aurora
