Almost any gap is acceptable, I doubt that in a world with Asari running around you can even go for age difference. Shepard might be a bit her seniority, but not by all too much, plus Quarians probably have a bit shorter of a life expectancy, and Shepard is partly artificial, thus less prone to decay. But I believe Tali would've gone for him even if his expectancy was shorter than the one of Thane Krios.

I didn't really see it that way. For me, Shepard saying that meant that he still wanted her but was unsure where she stood since they haven't seen or talked to each other in a long time(6 months wasn't it?). The same happened on Rannoch where he felt hesitant to ask her to join the Normandy because he knew her duties to the Fleet and to the newly recovered homeworld would mean a lot to her. I just don't think he realized how much Tali loved him. The romance was brilliant in every way in my opinion.
Also, regarding the hand thing, I think it's just a habit of Tali's. In terms of repeated patterns, I'd pass that off as a developer animation thing; Save time by repeating animations.
