Yes the fanbase loved her character so much they brought her back.  What is wrong with that?  They not only brought her back but wrote her story and character arc extremely well.  She represents something else in ME2/ME3 - A connection back to ME1.

Also it makes sense to have some squad mates follow you through the entire series.. Somewhat of a treat, reward.. incentive for those that play the series from the first game to the end. (and considering the endings weren't any of those, I'm glad we got team Dextro all the way through)

her whole mission would have affected the plot
if it werent for the endings.

I forgot about that.  It was the foreshadow mission for the original ending ideas for ME3.  Her mission in ME1 also was critical.  Hell now that I think about it, each mission related to her has had or was supposed to have serious implications down the line.

ME1: Evidence against Saren which opens you up to becoming a spectre/going after Saren.
ME2: Haestrom regarding dark energy (which would be big in ME3 original)
ME3:  Rannoch - Solo a reaper, peace with geth possibly, getting the quarian( and/or geth) fleet.  Also arc pistol!.

It has not been implied if Tali got out of the suit completely or not.  I think we would have to use our imagination.  But they definately had some sort of intimate encounter, as Tali removes her mask, and is seen putting a piece of her suit back on (Either her boot, or a fabric on her leg) when Shepard awakes.  I don't think they would risk a full-body encounter yet...

And according to the doc, not possible to have a baby by natural means.

I always assumed she took off the suit going by the nature of the discussions.  I also assumed they have been having sex when possible since ME2.  We know of probably three incidents but the line about adapting to him seems to imply a lot more out of suit contact.

I find that the overall look of Tali was acceptable and.. attractive.

Sheep have a more similar DNA structure to us... so yeah... Remember all that startrek cross species stuff is from some wierd thing about everone being based of the genetic material from some original galactic race or somthing.

They had.. what 3 hours in ME2? Also, Tali mentioned she wanted to take the risk if that was the last time they could be together. its obvious they had sex.
