My favorite has to be Razor's Edge. While more of a fan-novelization then anything, it does what it does near perfectly. Has the right balance of sticking to the story and making changes only where needed to better suit a written format. What sets the story apart from other novelizations I have read is that it adds a great deal concerning charecter interation and developement, particularly concerning Shepard's developement as a charecter and the establishment/building of the relationship between him and Tali. Also it doesn't hurt that Tali and Garrus get a much larger role then in the game.
