He says Humans and Asari are soft, less than a finger deep to sever the spine. Quarians not so soft.

To me that implies he's either talking about the fact they wear a suit or that they have tougher skin in comparison.
However if you look at their armor configuration compared to other species (not counting asari commando leathers which are just retarded considerig the weapons they're up against), they wear relatively little plated or distinctly solid pieces. This might suggest that the tougher skin thing is more accurate. Also tougher skin wouldn't rule out a weaker body structure either, which i assume refers to angular bones and different joint placing more susceptible to pressure.

Well Rannoch has lower gravity and atmospheric pressure then Earth so I can't see a reason why they would be more dense then humans. I'm not sure what Grunt meant, but perhaps he just meant they were tougher then they looked.
