I actually found insanity in ME1 to be kinda easier than expected. I had all the X armors, Spectre X weapons and as a soldier just spam overkill and immunity, swapping ammo types as needed. Already did an ME3 one and that one didn't seem so bad either.
I always bring with me Legion and Grunt, the two have the best weapons (widow and claymore) and they have many life points. They make everything easier. Once I thought it was just me, so I tried to bring with me Tali and Garrus.... terrible mistake.....

Insanity is easy if you play it right. Use squad powers to focus on powerful foes, stay mobile yet usetilize alot of cover, try for headshots, direct squatmates to attack specific enemies to either focus fire them down or distract enemeis for you, etc.

Cribbian: As far as Javik goes, you can take him or leave him. He offers good dialogue and scenes outside of combat, so you don't even need to take him on missions. Just leave him in his little room on the ship

Meeh, Legion also has a drone. Legion and Grunt are not just the only ones with the best life and shields skills, but they have powers to upgrade their shields, so, when they're close to die, you put that power and done, they are in the battle stronger than before. The shield drain is usefull, you're right, but I personally prefer a character with great weapons skills, like Legion, than one with some interesting powers. I mean, Legion is a real badass with the Widow, Tali with that shotgun can't kill even a fly. Same thing for Grunt and Garrus, grunt has "conc shot" and overload is usefull, but is much, much more usefull the grunt's charge. For making an example, before taking with me Legion, my team was Grunt-Garrus, and when I took Legion, there was a great difference. Same thing on the Tali's loyalty mission, where I brought with me Legion: even if it was a close combat situation, Tali died every 2 seconds, so I and Legion had to do all the work.
There are companions better than others, but maybe I just find Legion and Grunt more suitable to my combat style... Anyway I always found Tali and Garrus, in ME1, the weakest companions, in ME2 Garrus is ok, Tali not.
In ME3 instead Tali is a real badass, she finally has an armor, not a suit, and she is finally one of the best, at least for me

I found ways around the annoying bits. Polonium/Sledgehammer rounds to stop the regen and biotics/melee to knock enemies down then just stand over them and "rambo" them to death with my assault rifle. The spectre weapons never overheat!

Sometimes I wish bioware would give Shepard some comedic interupts for moments like this.

In terms of societal views on age of maturity, Quarians seem to be more or less in line with humans so that's a non-issue as well.... As opposed to Liara, despite being 100+ years old is still considered by her society and species to be barely past teenage level of maturity...
