Though which part bothers you guys exactly? I'm trying to remember but failing. I think the convo I get is different cuz I never recruited him in ME1.

Not sure whats so bad with them, the altered conversations make perfect sense to me...since Garrus is my Shepard's bro and before ME3 I already headcanoned that he is also very good friends with Tali (the three were all best friends, until the Shep/Tali relationship got upgraded to boyfriend/girlfriend). Plus I love the final conversation on the Normandy when Tali is romanced...Shepard gets to say team Dextro what I have always wanted.
Here is the differences between the two dialogues
Tali (or Garrus) romanced
Tali (or Garrus) not romanced

Anyway its good to know i'm not alone in shooting Garrus bottles. Tali is Shepard's girlfriend and Shepard is the better sniper. Its important for Garrus to learn that he's the sidekick here.

And to be honest, it didn't make sense to me that Tali and Garrus would hook up. For the first two games, for them it's mostly been a brother/sister relationship. You know, sibling rivalries and all that. For them to suddenly start flirting with each other... yeah, curveball there Bioware. GG.

Does no one here ever actually flirt? That quasi antagonist needling is grade school level flirting.
Admitedly in ME1 Garrus just gets off on the wrong foot with some of his elevator dialogue, but everything after that is pretty much bantery, friendly dialogue. Flirting isn't just saying 'hey there sexy'. I found the dialogue cute in the fact that Garrus was (just as he is in the femshep romance) completely awkward and misses the 'signs'.
