I don't mind the spoiler since I've already beaten the game, but that was as a male Shepard since I'm male so I don't know what happens.
I checked the wiki, but from what I read on the wiki Jacob
SPOILER
SPOILER
SPOILER
hooks up with someone else, a scientist named Brynn Cole, if Shepard didn't romance him. Is THAT why everyone's so upset? That he romances someone else if you don't romance him?

Forgive my ignorance, but will someone please send me a private message explaining to me how the Jacob romance is concluded in Mass Effect 3, and more importantly why everyone's so upset?

No, it's that he hooks up with the woman EVEN IF YOU DO. This has been confirmed.

played through completely (including meeting Jacob at the hospital after
his mission). There really hasn't been a character assasination in any
case. It's just that fans didn't get what they wanted.
If they had a femshep that suggested that Jacob's father end his life in ME2, then maybe that's what
comes back to bite them in ME3. Who knows?

SPOILERS! (just incase)
I had a femshep that romanced Jacob, and did not have his father kill himself. Jacob still does his thing with Brynn.
I would say it isn't like Jacob, he mentions how he likes to take things slow and how he can't see him self settling down in ME2 when you start to romance him (he says no one is waiting for him and there is no Mrs. Taylor because that isnt what he wants). He also stresses to Shep that he wants to take things slow and easy with her, that he does not like rushing anything. Yet, its been only 6 months since arrival and we last saw him, and here he is with a new pregnant girlfriend.
When you meet him at the hospital he just gushes about how he can't wait to start his family and be a good father (at which point he has a small moment lamenting about his awful father, and is broody about it). Thats pretty much the last you really hear from him until one point at the end where Shep can contact all her still survivng ME2 crew that isnt with her, and check in with them. He pretty much says "I am kicking ass out here! Ill buy you drinks if we win!" and thats it.

I never romanced Jacob, but I feel the same way about it. I feel like bioware completely rewrote his personality for no apparent reason.

I did. Trust me, this is what happens. bioware treated the Jacob romance like **** in ME3. There's no way around it.

There was no special dialogue that I could see. Still having a kid with the doctor. Doesn't aknowledge his realtionship with Shepard in the least. Shepard even tells Jacob "I'm happy for you. Really.". Even if that is NOT how your Shepard feels.
So yeah, this whole thing sucks.

Yeah, it's pretty apparent they put the least amount of effort into his romance because of his unpopularity with the majority of the fanbase. Couldn't even just have him sacrifice himself.
I won't even get to spill any drinks on the Citadel with the Shepards I didn't romance him on.

Sacrificing himself would still suck and would still get complaints from JT fans who romanced him or didn't . Even if Femshep got a good romance she dies at the end any way. 3 choices. Choose a path and die.

I thought his cameo in ME3 was pretty decent from a "bromance" standpoint.
But what they did with his romance feels inexcusable.

Man they took a dump on Jacob. So ridiculous.
It's more like they took a dump on Femshep or the Jacob romance. Jacob makes out fine personally.

Of course he moved on. And for the whole "ME2 Jacob would never do this!" crowd, things like this happen in real life too. Good people get caught up in new love and realize it's what they wanted all along.
I was heartbroken for my femshep, but I don't think it makes Jacob a bad person, and I don't think BW took a sh*t on him either. Life is unpredictable, as is love. Many of the romances in ME3 prove that.
