Don't get too comfortable in that thought. There were 3 romances possible in ME1 (Kaidan, Ashley, and Liara), and in ME2, they added 6 more, Jacob, Miranda, Garrus, Tali, Jack, and Thane, and 7 if you include Kelly Chambers. (Though it is rumored that Thane Krios, as sexy as he is, will have died from Kepral's Syndrome by the time ME3 takes place, so he may not even exist in the 3rd game outside of references.)
BioWare already has to somehow resolve 10 potential romance partners sub-plots you had previously in ME3, and it's been confirmed that there will be an option for more same-sex options, most notably, at least one for a male-male pairing. So that bumps the number up to 11 at minimum. (My suspicions say that one of the male/male options will be either James Vega or Kaidan Alenko.) Also, it is possible to cheat on your ME1 romance with another person, and if you were with Liara and chose to continue the romance with her in ME2, you can STILL choose a 2nd lover on the Normandy, thus becoming pimp Shepard (whether you are male or female) by the time you get to ME3. There is also still the possibility that BioWare will do the "Everyone's Available" thing again in ME3. Hell, Mordin might even decide to loosen up in ME3.

BioWare said that characters in ME3 will be aware of all past romances, which means that anything you did do before has to be resolved somehow, and either it will be a continuation from the previous game, or a confrontation of sorts. Will everything be available from the start? That is doubtful, but they will have to make room for them to somehow affect the game in ME3. Keep in mind, too, that ME3 is going to have several forks in the plot, since the game is the last in the Shepard trilogy. The writers are not constrained to make all possible choices lead to the same ending, and that includes romances.
