Actually, I like to think of him concentrating harder on the fight.  There's more to lose.  He's already lost Palaven.  He's worried about his father and sister.  Hell, he's worried about Shepard, romanced or not.  I think it makes sense he'd be less chatty on the battlefield.  He definitely seems more subdued in 3.

Perhaps a bit more mature, but i personally think its just BW not doing the game justice and not adding enough squadmate chatter. Every squaddie in ME2 is always saying something during combat, made it feel more personal and that they weren't there just as companions to stand aside whilst you dealt with everything yourself.

I know i rag on about ME2 being amazing....but it was....

Hahaha. I'm on the Citadel in ME2 sitting through all the advertisement on all the holographic columns for each level. Level 27 has has a column with an ad involving a turian hawking some kind batarian cuisine that he describes as "the other blue meat." Oh fanfic, you take my brain to hilariously terrible places.

 This is why Garrus is so awesome... The final "pep talk" before the last battle, after all the goodbyes, instead of trying to look GQ(Kaidan) or all pissed off/sullen(James) - Garrus in the ONLY one standing there with an actual weapon in his hands ready to protect and kick ass RIGHT NOW.

Curtains for the yeah-she-was-spaced-so-a-window-above-her-bed-is-a-brilliant-idea nonsense. And he'd pay some people to finally fix up Shepard's cabin.

Agreed.  The very last panel was brilliant.  That should have been the last thing we see before the pre-Cronos assault love scene faded to black.
