I'm trying to exhaust all conversations on the romance path for both Ashley and Liara before the inevitable confrontation. I want to know if it's possible to do so. My goal is to exhaust all convos between the both of them, complete Noveria, have the showdown. Pick Ashley and then have her die on Virmire. These 2 are the only main missions I have left. I only did 6 assignments on the Citadel so far hoping that I can trigger the conversations but it didn't work. Any help or suggestions?

i tried doing this also (not for the same reasons you did tho
), and had a convo with ashley at every time possible. i made sure to start dialogue with her emmediately after i got the normandy, then after therum, and every couple assigments after that.
since you saved noveria, a number of side-quests are going to be available when you get back. do those listening posts (alpha and delta i think?), and help LT. Duran hold off those rachni. i think there are a number of assignments that pop up when you finish the noveria mission. and i know for a fact i got to dialogue with ashley after doing that whole rachni side quests (listening posts).
EDIT : also now that im thinking about it, you should be able to reach their dialogue cap no problem. im pretty sure every time i romanced ashley (and liara once) i got all the way to the end of their dialogue. eventually they will talk to you about how they want shepards manhood, and say "we need to wait untill we have time, the mission is too important." then everytime you try to chat with them after they just repeat how they are waiting for you
