I don't think they have seperate organic parts exactly. I think its more likely they turn people to goo and they combine that with elements to form some kind of hybrid metal. Take away the water in most life forms and u get mostly carbon, which forms the hardest substances in existence which sounds pretty much like what the body of a Reaper should be made of.But I think the main point is to take the 'essence' of a species. The soul, spirit, whatever, which is why the Reapers only target sapient species and don't genocide the crap out of algae planets. But I really believe the Reapers will NOT be beaten in ME3. I think the game will end with them being driven from the Earth, and subsequent games will continue to deal with the Reapers. Most of the fleet is attacking Earth, but there are THOUSANDS of ships all over the galaxy. Not even shep can beat that:(

in NA, they'll land in a Wall Mart parking lot , watch all the obese pushing gigantic carts and panic over blocked reaper arteries.

Actually, all Shepard has to do is find six magical ponies, each imbued with one of the Elements of Harmony: Magic, Laughter, Loyalty, Kindness, Honesty and Generosity. Together, these ponies will defeat the Reapers through Pony Magic. Sorry if I spoiled ME3 for everybody...
