I have read the explanation on how the morality system works in Mass Effect 2 and to my understanding based on what i've read, it doesn't matter what meter you fill as long as you collect all the morality points possible regardless if they're para/ren?

did I understand correctly?

Unfortunately, no. Once you start down one path, you pretty much are stuck going down that same morality path if you want all of the para/ren conversation options opened up to you later on in the game.
Its the reason why Paragades and Renagons tend to edit their saves to give themselves lots of points in each, just so they can actually play the game without being penalised.

Also, receiving points in one does not reduce your points in the other, so enjoy all the renegade interrupts on your paragon character!
