So as the title says, I'll be doing Insanity soon enough and I have access to every single bonus ability, which of the abilities is best suited? Do you recommend something defensive ( Barrier, Fortitude etc)? Or something offensive ( Warp Ammo, Reave, etc )?

If it helps, I chose the Revenant.

I would suggest something with a short cool down, provided you're using ARush in most situations (I find Hardened + Revenant is a good combo). My personal favorite power for Soldier is Neural Shock, as it has a short cool down, CC's enemies, and keeps them out of cover for the duration, making them easier to hit. Also, it insta-kills husks. Slam is also a good power, as it can be used to set up warp bombs, has a short cool down, and insta-kills husks.

My preferred build is:

10 Hardened Adrenaline Rush
10 Commando
10 Inferno Ammo
10 Squad Incendiary
10 Heavy Disruptor (I use Zaeed for Sqaud Disruptor)
1 Neural Shock

Most common are neural shock, slam, stasis, and gave reave.
Neural shock has fast cool, decent effect, but doesn't effect protected enemies.
Slam had fast cool, allows warp bombs, kills husks but doesn't effect protected enemies.
Reave hits armor, drains health back to you but has a longer cool that will slow arush.
Stasis stops almost everything with few exceptions but the cool is longer which can eat into arush.

Don't take a defensive one; ARush is strong enough to make them obsolete.

Reave is very nice, especially if you stack Health gear, but only really comes to its potential with its area version, as ARush is just so strong that it's preferable at most cases. Some Soldier builds base around Reave as the central ability, and getting the area version then takes priority before other powers (yes before ARush even).

If you want to maximize DPS (at the expense of other elements) then Warp Ammo and Tungsten Ammo is a viable option, with Disruptor for different situations.

Neural Shock has an area version and a very short cooldown (3sec) but I never take it because I've found it less reliable if used on enemies with their defenses up.

Slam is one of my favorites. It has a short cooldown (3 seconds), can be combined with Warp to create a Warp Detonation (only requires one additional squaddy for it), works all the same with only 1 point, and works well as a stagger for defended enemies (try going head-to-ehad with a Scion and see what I mean).

Stasis is one of the best powers, but I never use it on my Soldier.

edit: by the way, Zaeed's Heavy Disruptor is always better than Group because it overheats enemies' weapons.

Actually, they both overheat weapons. Heavy makes geth explode when they die.

I like to choose Warp ammo. It's extremely helpful and provides you a mean to deal with enemies with Barrier protection. And I found combination of Mattock+Warp ammo+Adrenaline rush awesome. You can kill even Praetorians with minimum problem and Collector General dies with two clip.

But whatever you choose, don't get Geth shield, Fortification or Barrier. Everyone of those cooling time is about 9 sec, while adrenaline is only 3 sec, which means you can use it nearly constantly. And protection wouldn't even really help on Insanity. Enemies cut through them without much effort.

For the Widow Soldier, Stasis is a fine bonus power, despite the cooldown, because of the fall-damage glitch.

Reave is nice.

Neural Shock is good for snipers, as it makes enemies stand upright for its duration, and unlike Stasis, it lets you shoot them while they're cc'd.
