BioWare's male love interests have two severe deficiencies:
Firstly, they are all with the exception of Sky and to a lesser extent Alistair, late bloomers. Most of them do not come off as romantically appealing or even mature until later on. Serious flirting does not begin until later, and the real meat of their romance track comes in when it is almost over. Zevran, for example, is a character I *swore* up and down I would never enjoy as a romance for a long time until my last game of DA. My character actually dumped him for Alistair in the end since I was determined to see my plans through; but I was awestruck by his genuine change later on. Unfortunately the player has to go through a ton of corny sex humor and BS bravado to see what kind of person he is under all that junk.
Anomen and Carth were the same. So is Fenris from what I gathered. Admittedly Kaidan is just plain boring, though. The less said about Jacob, the better. XD By contrast the female love interests hit the ground running. Their changes are subtler and they are usually immediately likeable if one is already drawn to that type. The only female romance BioWare has done where the character really gives you a hard time is Viconia. Navigating her dialogue during the early game is like navigating a minefield blind while crawling on your belly.
Secondly, and this is specific to hetereosexual males playing female characters... most of the guys are kind of, well, pushovers. The female protagonist is more badass than any of them story wise. She is usually more in terms of game mechanics too. Dealing with romance after romance where the male love interest has serious emotional issues, and leans heavily on your character to see them through, hurts their image. I do not know if this applies to you specifically, Ryllen, but in my experience browsing BioWare's forums over the years, guys are not crazy about that.
Granted, most of these characters *can* do with a kick in the ass, but they are usually criticized more than they might deserve. Female characters tend to be judged more fairly by both genders in comparison. I do not expect BioWare's male love interests to break the mold anytime soon, alas. Since their formula has satisfied more players than not, there is no incentive to.

I freed him from his demonic taint and we went off romping across the planes - still my favourite to this day. His voice actor was great too.
I don't know why, but for some reason the companions from HotU all remain staunch favourites. Valen and Deekin stand out, but it even made me like Aribeth. That expansion pack was golden.

Ooooh that's a good one. I never finished HoTU for some reason (must've been how boring my rogue/shadowdancer was, totally OP but boring as hell) but Valen was the one sole reason why I regret not finishing.
But still I guess my fav would be Kaidan. I just wish he would have more darkness in him in ME3. Mature, stable guys are fine and all but I sometimes miss that "nasty spark". Anders romance had that to some extent but he was just so damn melodramatic. And Fenris is a bit too dark and angsty.

Morrigan - cool, I depended a lot on her as a mage so I got attached due to her life story, funny specially when she and alistair bicker like children, she save my life as well lol
Isabela - sexy, she came back for me, I sailed a ship with her, she's a hilarious ho what can I say
Viconia - I kinda pitied her when I found her at the burning stake and how all people hated her for being a drow.

No, I don't really think that applies to me, I never thought Alistair was a coward or Carth whined too much. I actually liked Carth somewhat as a character. And my femShepard did flirt with Kaiden. I might even have her romance him in ME 3 if romance decisions are that dynamic in the game. I was kind of annoyed with how Bioware made Ashley and Kaiden both walk off on Shepard in ME 2, and the Liara experience was odd too for that matter. But, back on topic. I enjoy roleplaying all kinds of characters, most of the male NPCs do fit an odd mold I don't find appealing, even when trying desperately to be in character as I play. I agree with you that the male characters are often criticised too much. My main issue with Alistair was that much of his dialogue straddled the fourth wall, sometimes sounding like blatant ad-libs that were accidently left in the game during recording.

Edit: Oh crap! I forgot about Garrus. He's a cool male NPC romance option and Thane is somewhat. It's kind of rough though since Thane is a terminally ill lizard man and Garrus is some sort of avian raptor guy with massive facial scar battle wounds and is based of different amino acids to top it all off leading to a whole bunch of bizarre complications (like Tali). So romancing Thane with femShep seemed like a tragic fling and romancing Garrus seemed impossible too. But, the characters were cool. Jacob was human, sure, but that would be like romancing a rock. He just was so plain and uninteresting to me. I know alot of people say that but sometimes it's just better to keep characters without a romantic involvement than to have one for the sake of having one. My male characters also come to that conclusion too often in Bioware games.
