I believe (correct me if I'm wrong) that most geth only have around 100 programs within each legged platform. As far as we know, Legion is the only geth with 1183 progams (and the only geth with significantly more than 100 progams).
Why is this so? Wouldn't it be beneficial for everyone if there were more "unique mobile platforms?" It could improve the perception of the geth to organics, and would likely increase relations between them. Not every geth could/would be like Legion (unless they wanted to drastically decrease their numbers), but I think overall it would be better to have more geth like Legion.
Do you think that there is the possibility of seeing more Legion-like geth in ME3?

The geth aren't too interested in making nice with other races. They just want to be left alone.

Geth don't think like organics it seems. I believe Shepard asked the same question to Legion himself. Legion answered that it wasn't deemed necessary to build more Geth like him. The only reason why the Geth would build more of them would be if there was ever a proper alliance between the geth and organics. The talking geth could then be used to transfer messages between the two peoples.
I doubt we'll be seeing any more Geth like Legion in ME3 and that's fine with me, It would just make Legion less unique.

Convenience to the storyline. The way it's explained in game, they make it seem like each geth program can only be downloaded once instead of having multiple copies. even though this doesn't really make any sense, it would explain why legion is a rare model.

Geth seem to spend most of their time in large 'databases' like the devices seen on the Heretic station. I think that they only use platforms for menial tasks, so they don't need to waste resources making one that can house thousands of Geth programs.
Legion was made to look for Shepard and communicate to organics, and they only needed one to do this task. Plus between the expressions and the utility, a lot of work and study of organic species went into making him, and even then it's not perfect.
I see him as more of a prototype. Now that he's reached out to organic species others may be produced to continue building relations.

They've got no need for it. As EJ107 pointed out, the purpose of Legion was to seek out Shepard. None of their existing platforms were complex enough to operate independently outside of the collective, so they created and deployed a mobile platform that could function outside of their sphere of influence and interact with organics.
They'd only need more mobile platforms if they truly wanted to interact with other species, but if what Legion said is true, they'll be happy to sequester themselves inside of a dyson sphere to compute in isolation.
The only problem is that geth are so feared and reviled (in large part because of Saren and the heretics, not to mention that little quarian extermination debacle) that the organics of the galaxy don't believe that and feel they may need to do "something" before the geth do.
