My main paragon Shepard will marry Ashley and settle down somewhere nice.

My main renegade Shepard will retire to Tuchanka, get drunk with Wrex and shoot pyjaks all day. He'll also visit the shadow broker base every now and then when he feels the urge to "embrace eternity."

Shepard already died once, it doesn't matter. Lazarus II him. Death is only a minor setback in the ME universe now.

Make a though decision of choosing between Ashley and Tali.

After that... well, Shepard is going to keep going as an Spectre, will help to clean up the Reaper mess and watch the galaxy from treats like them.

Then and given that my Shep also wants to raise a family, he will quit from dangerous adventures and will try to work into "human" (beings) rights and peacekeeping projects as a no institutionalise spokesman. Helping governments and races to solve their differences. Such as the conflicts between humans and batarians, or between Krogans with turians and salarians.

The reapers might be gone, but there are a lot of dangerous interest to fight against.

This.  Which will lead to boinking the ever-loving crap out of their LIs.  Thane will need an oxygen mask, Garrus will have an intimate knowledge of "interspecies awkwardness things", Ash will walk funny for weeks, and let's just say Joker is gonna wait a long time alone on the bridge.
