I really enjoyed adept, sentinel and infiltrator in ME2. It will al depend on how the classes have evolved and if I'm rewarded for using the same class as the ME2 character I'm importing. Probably adept though.
Which class are you going to play first as?

Depends. If Infiltrator still has it's invisibility cloak that'll be first, if not then my adept Shep will be first.

My "canon" Shepard is a Vanguard, and I have two other Vanguards waiting for later playthroughs... so Vanguard. Followed by my Infiltrator, possibly followed by my Sentinel if I don't feel like going back to Vanguard immediately. (I like hybrid classes.)
My least favorite class remains the Engineer. It's different, and I like it for that reason, but it's just not particularly suited to my playstyle.

Nothing wrong with that. Plus, Engineers are especially handy when you're fighting synthetics (which goes without saying). I just happened to appreciate and apply it much more during my last playthrough.

It is silly of you to choose class before general overview of all classes. Skills are going to be recreated... Thats why I will not choose now.
For mass effect 1 and mass effect 2 I went for solider and adept.

I just replayed ME1/ME2 for a clean import (Infiltrator in ME1, soldier in ME2). I somehow forget to use biotic abilities, and wind up shooting/sniping everything anyway, so any class that lets me use ranged weapons works well for my tastes.
All classes can have all weapons!!
I'm staying Sentinel. After the initial playthrough as I was from the get-go.
