Why didn't Garrus and his team take down Aria?

Because she is way too powerful, based upon the first few chapters of Retribution.

And probably we'll see her a lot more in ME3, since she played a significant part in that novel and the comic posted on this page.

I don't think she's that unprotected. My bet on stationary kinetic barriers around that small alcove she uses to sit in, bulletproof fiber and matriarch-grade biotic barrier rising when things get hot.
Honestly, I don't like Aria much, I just don't need in another LotSB-like situation: big and scary person who made enemies all around the galaxy sits practically undefended.

Aria is a fusion of Commissioner Gordon & Talia Al Ghul to Garrus's Batman. I can totally imagine her helping Archangel because less mercs equals more power and less resistance for her and she doesn't even have to move her pretty little fingers. I had this whole pseudo Frank Miller/Vertigo comics universe set up complete with Morinth as a Superman expy provided she only killed bad guys.

She proabbaly has kinectoc barriers around her sitting area and a constant Barrier up which doesn't take much effort

Eh I never really saw her as being extremely evil/bad to be honest. It just wouldn't be worth it. Plus it would be a suicide mission to take her down...most of the people on Omega love her and respect her don't they?
