I was a bit disappointed with the DVD for ME2. Honestly the Game Informer interviews are fantastic would like to see them and more on a DVD. There is no listed DVD for the Collectors Edition. Is the details for the Collectors Edition even final?

But, yeah, I'm not sure. I hope there's a good extra content disk, but I'd honestly rather have nothing than what we got last time.

You didn't like the 30 minutes of BioWare workers and executives telling you how great job they did and how they are awesome and how the game is awesome without showing any kind of actual development process? Outrageous!

I believe the reason for there being no "Making of" dvd in the CE version is because Biowarepulse is going to be showing things like that and it will be available to everyone. This is what David SIlverman had to say about there being no "Making of" DVD :-
So there will be plenty of "behind the scenes" stuff but it will be shown on Biowarepulse and not restricted to those that buy the CE edition. Hell if you want it is hardly a great effort to just collect them altogether yourself and chuck em onto a DVD, you will probably do a better job of producing a "Making of" DVD than Bioware did for Mass Effect 2
