Like? The Krogan are pretty straightforward and blunt but with ME3 and that female Krogan, we may see a different side.mauro2222 wrote...

The Salarians are concise and to the point due to the short lifespan. They try to accomplish alot with the time they have.
Asari, well the ME wiki goes into deep detail about their culture, attitudes, and the "longview" they take in life.
I doubt if the Vorcha would be even worthy to look into.
The Batarians, are who the Vorcha would evolve into.
Humans? Well just look at the state they're in throughout the ME series. In the future, still addicted, blackmailing, extortion, etc etc. Funny how even in the future, the human condition is still at a low point.
The Hanar are devious in my opinion but their view on religion is worth reading about.
The Drell are very spiritual and their culture is very interesting since they can feel every memory they recall. Very, very interesting culture.
The Elcor, one would need a lot of patience with any hope of learning from them due to the slowness of their speech.
The Quarians are the nomads. Mysterious. Would love to see how they react when they're not crowded together.
So yes, I would like to see more of that "interaction" between the species of ME but with this war looming on the horizon, I'm just hoping I can keep them alive.

I could consider myself a culture geek, because I love to learn about other cultures. I was hoping to see more social interaction with every species, they views of the galaxy, I would like to see quarian music for example (specially after the side mission with shiala, that just started up my curiosity XD)

The vorcha would be rather interesting, i think, considering their acelerated "evolving" and their subjugation by others
