I like batarians because they're underdogs. They stand in stark contrast to humans and the Council races. Even on the forums they get the short end of the stick.

I'd like the rachni if we ever actually got to see their technology in action. Otherwise they're just bugs. They're much more interesting as a technological race though, much like the arachnids from the Starship Troopers novel.

And the Elcor. They're damned cool. An Elcor punch would probably shift a Reaper.

The Collector vessel turned out ot look quite close to what I'd envisiond the Rachni to fly around in, for some reason. Completely agree, I really want to see how they flit across the universe (then again, they repaired that Asari's ship, so maybe standard metal like other races...?)

It hurts my immersion a bit that we never see any. Especially when they've been present in the novels/books.

Okay in that case, I'm torn between Krogan, Turian and Geth. Though I kind of like all of them in some way.
I like the Krogan because they are tough and cool pissed off turtle men. Plus, I love reptiles and they are among the few races in Mass Effect that are directly identified as being reptiles. So it was sort of an easy win.
There's not really much else to add. I got the figure of Grunt specifically because I felt my household needed more krogans.
I like the Turians as well, largely because they kind of look like Velociraptors. Plus they are a pretty common race in Mass Effect and one member of their race in particular is now the most prominent male alien squadmember in all of the series. That said, I would like to see female turians from time to time.
Finally, Geth. A really well thought out depiction of how a synthetic robotic race might actually work. A lot of thought went in to make the geth seem really strange and alien and unknowable, but it was also cool that unlike in other media, they aren't by default evil for being machines.
True, there are a lot of questionable things that they have done over the years but the fact remains... they don't spend their every waking hour plotting how to kill everyone who dares to smile or enjoy life in any way. In a media saturated with bulk standard 'rah I are robot and evilz!', the Geth stand out as being morally ambiguous.
Which in turn, is why they are great.

Only one of the Vorcha even has a name(Shisk) and he's near pointless due to the fact that his side quest(or whatever it was) was removed. Sadly, as much as I love the Vorcha i'm somewhat sympathethic to your sentiment regarding them being in the game to begin with. It's like what's the point of having them if they're going to be so underutilized? It's the same situation with Morinth as a squadmate.
Still, I'm hopeful Bioware decides to add much needed depth to them in ME3 as there's several major things they can do with them (ex. restoring the Blood Pack under Vorcha rule and recruiting them as shock troops against the Reapers).
