It's obvious: The Protheans were protean

The writers have intentionally left us guessing about the physical appearance of Protheans because...guess what... they were shapeshifters.

(of an actor or actress) versatile; able to play many kinds of roles. 4. ( initial capital letter Posted Image) of, pertaining to, or suggestive of Proteus 


And we all know their penchant for Greek allusions...

In Greek mythology, Proteus (Πρωτεύς) is an early sea-god, one of several deities whom Homer calls the "Old Man of the Sea", whose name suggests the "first" (from Greek "πρῶτος" - protos, "first"), as protogonos (πρωτόγονος) is the "primordial" or the "firstborn". He can foretell the future, but, in a mytheme
familiar from several cultures, will change his shape to avoid having
to; he will answer only to someone who is capable of capturing him. From
this feature of Proteus comes the adjective protean,
with the general meaning of "versatile", "mutable", "capable of
assuming many forms". "Protean" has positive connotations of
flexibility, versatility and adaptability.

The problem with this theory is that most ME species are based(at least loosely) on existing biology, and I am not aware of any complex organism that would fit the description.

"Depending on how the words 'proto' or its derivative 'protero' are interpreted, the word "Prothean" could mean "someone who existed before Gods" or "the first or former God". The Protheans also bear a strong resemblance to the mythological Titan Prometheus who gave fire to mortals, which enabled them to learn the arts of civilization-

If the Protheans were changelings, why would there be statues that depicts their appearance on Illos? As stated above, there's a good possibility that they were named after Prometheus, who gave fire (or in the Prothean's case: intelligence) to the humans.
