Well basically my usual as a melee rogue, dual-wielding.
But recently for new events I've tried 2 new classes, a two-handed Greatsword Warrior, and a Mage. However these being two completely new classes, I really have no idea where to go with them skill-wise, aside from haste, healing, or power attacks. I also have just been adding strength, constituation, and some dex or cun to the Warrior, and primarily intellect, will, and some constituion to the mage.
To that note, I've no idea what type of equipment to keep an eye for aside for defense-increasing robes, mail, and attack, stam, mana, and stat-increasing accessories. But even then I'm worried I might be stacking on the wrong ones, especially for the warrior since I'm trying him on hardest difficulty.
Decided to try out two new classes, but I'm currently at a loss

There are several outstanding guides on the forums which should be what you're looking for. Take a look through the stickied list of class guides. Arelex's in particular are the most comprehensive and up-to-date.

Mages generally have no need for anything but Magic and Willpower. If a blood mage, you need only enough will power to equip armour, otherwise need constitution instead.
Warriors just need Strength and Constitution, maybe a little willpower for abilities. No need for dexterity usually.
Generally I just keep an eye out for the special sets in each act. So mages have the robes of the spiral eye, while warriors have armour of the fallen in act 1.

Alrighty. I'll remember that. On a side note are there any staffs with decent effects I should keep an eye out for?

What Apathy said is somewhat accurate, but you should really follow what Arelex recommends.
Hands down best staff in Act 1 is Staff of Primal Order from Bonny Lem. In Act 2, Cold-blooded from Magnum's Wares on the Wounded Coast is pricey and powerful for most of the Act, or you can save the gold and rush Voracity by doing Forbidden Knowledge. Act 3 you can immediately purchase The Final Thought for a hefty sum.

If you have the warrior DLC, there are 2 great-swords and an axe for Sword and Shield that are very nice. If not, for act 1 I would suggest either going with the fire greataxe from the emporium and hayder's razor till the shops start to sell great-swords that surpass them in damage late in the act.
Act 2 great-swords, you get one nice one from completing the Blackpowder quest early, that will carry you through the act, if you have the warrior dlc, then empress point in hands down the best physical greatsword you will find, usable at level 17.
Act 3 Bloom (cold damage), Celebrant (spirit damage), Sundering (electricity damage), Empress Point (physical damage). nuff said, google for all locations I'm too lazy.

alrighty good enough since locations don't matter and I scour every locvation multiple times anyway. Actually this just hit me, aside from element and magic vs physical i have no idea what elemental alignments do, like spirit and what not.

I guess now my final question is early in act one is there any piece of mage equipment I should keep an eye out for? Also... I'm ashamed to admit to this but I think I could do better with the enchantments and was wondering if someone could provide some guidance, especially since the first game I'm always doing something stupid like pairing spirit, electricit, fire, and ice damage to the same sword or bow. Or I just slap on the general stat boosting ones, so any advice to using runes better or a good place to look for better enchantment ideas?

The mage guide in my sig answers a lot of your questions about gearing up in Acts 1 and Acts 2. I talk about runes and specific gear there.
