Have Alistair taunt everyone and then have Morrigan cast Force Field on him. Then Cone of Cold everyone around him and cast Stone Fist or Crushing Prison on the Frozen Targets or just have Stein use his on-command crit abilities for shatter combos.
If your mages don't have Cone of Cold or Force Field for some reason, then tell us what they do have instead.

If you're struggling on certain fights, my advice would be to pause regularly and check which enemies are causing the most trouble. They aren't necessarily the big hitters... enemies that stun or paralyse can give you a big headache.
Don't forget that healing potions are there to be used. I'm a hoarder by nature, but I've had to learn that they're tools, and not just to be stocked and sold.
Your main party doesn't include a rogue... not necessarily a bad thing, but you might struggle with traps, and I find a quick 'dirty fighting' stun can make a huge difference if used on the right person.
Do all origins start with the Marbari hound? In my experience, he's able to soak up far more damage than anyone else.
Though please note that I'm still on my first playthrough, so I don't have any great tips, really. If I really get to grips with tactics, I'll let you know.

3 archers and a mage raining holy hellfire from above, saving when the game allows. I only switched to melee for the last bit of the battle when they finally closed in on me. Alas, too late for them.

BGs (especially first) on max difficulty were FAR more difficult.

With two mages you should have *more* than enough healing, if they both have at least heal. You did take heal on both, right? Do your mages have high magic and willpower enough to get through fights? Do they have good spell choices? Using AoE can be difficult to micromanage, but mages have very powerful single target spells, and some very powerful CC and defensive spells as well. Spells like Winters Grasp, Force Field, Paralyze, Misdirection Hex, etc are very easy to use and very powerful. Do you have them?
Are your damage characters attacking your "tanks" targets? If you aren't ganging up on targets, they will take too long to die, and you won't be able to keep people alive. What I often did with a party consisting of myself (shield warrior), Alistair (shield warrior), Leliana, and Wynne, was split fights up, with Alistair getting the attention of some enemies, with Wynne attacking his target, while my character would get the attention of the majority, or the meanest enemy, with Leliana helping to kill it. I had almost no CC, and no AoE on my playthrough, with Wynne being a healer and buffer, with no damage spells, and I did fine. You need to re-evaluate your choices, the game is challenging, but not that difficult.

Yeah, to be honest, the dialogue and story attract me far more than the combat. I want to be able to take a group that's not optimal for combat if they're good fun to be with...

Party Makeup - PC/Morrigan - Bloodmages, Wynne - whatever you want really. She's your healbot and for lulz make her a bloodmage too. Plot holes FTW!, Tank - anything/Champ.
Have your tank run in Taunt and War Cry then cast Force Field on him and then AoE everything to hell. Have the rest of your team be ranged so you don't get hit by FF on the AoE spam.
Have your bloodmages cast Blood Wound and then Death Cloud. 2x Blood Wound and 2x Death Cloud = virtually certain death for 90% of the game. I say 90% due to the mobs that are immune to Blood Wound. If you need more dmg Have Wynne cast Tempest. I like the ice and fire spells, but the resists of certain mobs make those spells useless for some parts of the game.
For your tank configuration at a minimum get Powerful, Threaten, Bravery, Taunt, Shield Wall, Shield Balance, Shield Expertise and give him a lot of dex for dodging. This is really only for those rare times when you can't cheese out and just cast Force Field on him and then AoE.
Srsly though easy game is easy. I'm running through it now trying to make it hard by doing a rogue only group of me, Zev and Leliana as rangers using only bears if I need a tank.

Its my first time playing this kind of game and I started on normal then upped it to hard and now to nightmare..
Just use creative tactics..
Once I was left alone in a fight with lot of enemies surrounding me..
I used mind blast, then casted inferno on me and then force field to protect me while inferno killed enemies..
Its all about creativity and using the right moves at the right time
