Which ammo type should I give my Sentinel on Insanity.

Though the damage is lower, Warp affects Barriers besides Armor and Health and also damages synthetics unlike AP.

4 Heavy/Area Throw
4 Heavy Warp
4 Assault Armor
1 Overload
0 Cryo Blast
4 Guardian
4 Area Drain
That's a common insanity build, especially for shotgun lovers. You can get ammo powers from teammates, or just forgo them entirely. You can Warpbomb allies' Pulls, get in close with Assault Armor, and steal their shields with Area Drain. Very versatile and durable. Oh and there's plenty of eezo so if you want to respec into Heavy Warp Ammo or something else for Collector/Bloodpack missions, go for it.
A slight variant that focuses on Warpbombs, Power Armor is taken instead for the biotic damage boost and teammates are always Jack and Samara, for their quick-to-cooldown Pulls (recommend only giving rank 2 or 3 Pulls, that way you can still give them Squad Warp Ammo and Area Reave). Assault rifles could be chosen instead if more mid-range defensive-stripping, to enable those speedy Pulls, is desired.
There are plenty of other solid builds, such as those that take Stasis or any of the other useful bonus powers... or hell even without any bonus power. The Sentinel is an inherently strong and versatile class.

My caster sentinel is currently running
3 Throw
4 Heavy Warp
4 Power Armor
4 Area Overload
2 Cryo Blast
4 Guardian
1 Stasis
For a while I wasn't using a bonus power at all, just going 1 Cryo and using the rest to max out Throw, but I found myself using Throw primarily for freeze/shatter combos, so the slightly longer freeze duration and the panic-button utility of Stasis won out. I fire my Vindi maybe twice per mission with this build, and just kill everything with Warp/Overload/cryothrow depending on what enemy I'm facing and how I'm feeling at the moment. It makes for highly varied, primarily midrange gameplay, which is a nice counterpart to my Vanguard main.
