 I'm using Grobnar to buff my party with Song of Defense, getting bonus to AC, then two seconds after I switch back to my main character, Grobnar changes to Song of Competence. Every time I try to choose any song other than Competence, he switches back to it in a few seconds! How can I get him to go by my song choices?

Is it because I have him on Overkill Spellcasting in the behavior tab? I thought that applied only to spells, not bardsong. Regardless, I can't gimp Grobnar by switching off spellcasting, I need him healing me in battle, so how can I get the song-stuff to work?

Switch "Infinite Buffs" (or similar, I don't recall the exact name) to off. If it's on, he'll use Competence or Regeneration outside combat (if someone isn't at max HP), and usually Courage in combat.

Keep in mind that there's a bug with transitions and you'll have to reactivate his inspirations, or the effect won't be applied.
