I have three completed:
Elenore - Spacer/War Hero Adept 90% Paragon who romanced Kaidan.
James - Spacer/WarHero Adept 95% Paragon who romanced Jack (figure that one out )
Kendra - Colonist/War Hero Adpet 75% Paragon who romanced Garrus
I'm working on:
Bree - Earthborn/Sole Survivor Vanguard 75%Paragon who romanced Liara
I've got two other builds planned. One one of them I HAVE to do a renegade playthrough. I just hate being evil. Neither of these builds will have romances attached.

I have eight different Shepard ready to go.  Six of those are ME1 imports.  One is a default ME2 Shepard.  The other one was created through Genesis.

Kaidan is alive in three, Ash in five.  Five paragons, three renegades.  There are three femSheps and five maleSheps, but I play my canon femShep more than anything.  Wrex and Rachni Queen are only dead in the default ME2 Shep.  I don't remember about the council.

Five lost people during the SM.  Which leaves three with everyone. 

Some didn't do all the N7 missions or do the dlc missions.  Every game should be slightly different.  I just need to make my mind up on which order to do them outside of playing my canon femShep that lost Tali/Mordin during the SM.  That one could be my hardest game.

I have 3 Shepards on 360 and 2 on PC.

Todd Sheapard 1: paragon, infiltrator, no romance in ME1 or 2, Kaiden lived, lost Thane, Jack, Legion, Tali, Garrus, and Miranda during the suicide mission. He is a nice guy who enjoys talking to his crew and helping them out when they need it. Rarly ever does renage action because he prefers to be the good guy.

Vi Shepard: renegade, solider, romance with Kaiden in ME1 and Garrus in ME2, Ashley lived. Some may consider her mean but she is just very tough and doesn't put up with crap, especially when they are working. She can show her femenine side at times such as when flirting with Garuss and is willing to help her sqaud out if they need it.

Todd Shepard 2: I re played his story in ME2 but this time made sure everyone survived and had a romance with Miranda.

Laura Shepard, (my canon Shepard), pargon, soldier, Romanced Kaiden in ME1 and Garrus in ME2., Kaiden lived. Very nice women who loves to do good. She not only helps her team mates when they need it but she enjoys talking to them to see how they are doing. She also will go out of her way to talk to the other crew members such as the chef and doctor to see how they are doing and if they need anything. She will however though do renegade actions at times if someone makes her really made or they are just asking for it.

Damian Sheaprd, renegade, solider, no Romance in ME1 and currently Im playing his campaign now and I havent gotten to any romance parts but I think I will go with Jack, Ashley lived. He is not the nicest of people. Does not talk to his team to see how they are doing because they are there to do a job and nothing more. He is nice to his team but in the sense of it is showing them respect so they will follow him. He does not help them out if they have a problem and is only interested in doing what his superior officers tell him. This play through is taking longer since its bothering me to play as him lol.

I plan on having three Shepards. They'll be the same apart from who they romance and sacrifice.

1. Romance Liara, sacrifice Kaidan.
2. Romance Ashley, sacrifice Kaidan.
3. Sacrifice Ashley, romance Tali in ME2.

I suppose I could do more save games where I be a renegade ****** all the time, or I romance and stay true to Ashley, or so I can see what happens if I destroy Mordin’s data or give the Collector base to the Illusive Man in ME3… But should I? Do you?

Renegon - The Punisher type (Vanguard) - Colonist - Ruthless - No Romance
Paragade - Tony Stark type (adept) - Colonist - War Hero - Romances everyone (Liara >Jack) 
Paragon - Superman type (engineer) - Spacer - Sole Survivor - Ashley
Paragon - Col Jack O'neil (SG-1) type character (sentinel)  - Spacer - War Hero - Tali

My main canon however is a mostly paragon vanguard male Shepard. Romance Liara in ME1, Miranda in 2.

I have quite a few. Since I like to experiment with love interests and outcomes. I normally reuse characters from ME1 and edit them in ME2. Here are my main ones however. I have saved Ashley on other playthroughs, just not my main ones, lol.
