Well it's the age of Dragons because a dragon was spotted before Fereldan was freed from Orlais. Not because a sudden boom of dragons.
Besides shouldn't they be near extinct especially since DA2 they happened to attack in huge numbers?

What i mean was more various dragons with different looks, powers, attack...... not many dragons

So the equivalent would be a dragon that swoops overhead with a raking attack or flame burst (a la Flemeth style), or smaller flying creatures that hover or flap around whilst attacking. (Darkspawn Vampire Bats ! One of the Architects early experiments perhaps)
Take the combat into the third dimension.

I wouldn't mind seeing an Halla... I mean the Red Elk in princess Mononoke was nice.. and well I would rather traverse Thedas on the back of an Halla than on a horse. If there needs to be horses it better be some Firemares.
Well my request wouldn't quite be a race but I would like something of an asian culture influence or maybe indian. maybe something that's is not yet on the map of Thedas.
A Naga like race would be nice.

Oh, and I'm counting demons in general as a "race", such as they are, considering each different type of demon is just a manifestation of one thing or another. So, more interesting and challenging demon-battles? Hell yes.

I know but you can't do anything with the Halla in DA:O and they are cute....

Every "race" you mentioned (except more fade creatures and possibly elementals and non-cliché vampires) simply don't fit into the lore.
Bethesda could do this, because they didn't take their games too serious. Thedas, however, is somewhat a fantasy abomination of the real medieval europe, somewhat dark, messy and serious. Having Khajiit like creatures jumping around in Orlais, saying "May you walk on warm sands" is just ridiculous.
That said, I'm totally fine with the intelligent races so far.
