It feels particularly forced and weird for Shepard to be prevented from having those kinds of relationships in ME1 or 2 and now, all of the sudden, s/he is bi come ME3. It feels more like a pander to those groups who really wanted it rather than a serious storytelling decision. I personally am not against such relationships happening in video games. But I don't think it should be put in for the sake of it.

nah were all bisexual inside. we just don't know it yet and will realize it in the future

It wouldn't be swooping most of the characters in Mass Effect 2 give off a bisexual feel. Or in some cases a straight up homosexual attitude (Jacob).

As a (proud!) member of the LGBT community, I was offended by this subjective sexuality perhaps even more than by the absence of same-sex options. Basically, it suggested to me that sexuality is not relevant to a person's character, and that is so, so wrong and also deeply wounding to me personally. My preference would be to have characters of heterosexual, bisexual, and homosexual orientations, but I recognize that this is problematic in terms of development resources.
I also agree that modifying an existing character's sexuality is not a good solution, although I believe that in the case of certain characters it could be done believably.
tl;dr: No.
