1) Having characters heterosexual or stricly lesbian/gay isn't fair to the player. We need to be given more options so we can make the experience truly our own. The characters should be bi so we can make the decision for ourselves.
2) Having every character bi would take away from the game experience because every character will be approaching Shepard in a romantic way. That would get really old really fast. Also my favourite character would be made to be something they clearly aren't.
PLEASE READ BEFORE POSTING! I'm suggesting a solution to the problem.
Solution so both sides are happy: Make romances so that they can only be initiated by the player. If the characters never say anything romantic and it's only able to start with player consent, then everyone will be happy. Make all characters with the ability to swing for both teams, then it's really up to the player to decide if the characters actually want to go for Shepard or not. In the past, characters began to flirt with Shepard making their romantic feelings clear from the get go. If those kind of things were not allowed to happen until the player (Shepard) made the first move, then there would be no reason to complain.
Edit: If I didn't articulate how this would work well enough, I apologize.
Basically they would all start with non romantic dialogue. If Shepard said something romantic, then the romantic responses would begin, if Shepard didn't say something romantic, then the romantic responses would never come up. Make sense?
