Those links are lists for all the quests in each game. FO3 had 31 marked quests and FNV had 105 quests.
When playing I didn't sit back and count the quests, of course, I only know that my New Vegas playthroughs seemed to last much longer (first playthrough lasted nearly 200 hours, without any DLC or quest mods, second I haven't finished yet) and I was enjoying the game more.
When I checked the list of FO3 quests to confirm a comment about the number of quests in Skyrim being "6 - 7 times" the number of FO3 quests, and I saw there were only 31 quests, I started wondering how many total quests were in New Vegas.
Obviously one really good quest like Whodunit? in Oblivion or Tranquility Lane in FO3 is worth much more than numerous smaller quests, but in general I think the more quests, especially side quests, in any RPG, the more I'm going to enjoy the game.
The great thing about Bethesda's RPGs is that they ship modding tools and there are lots of community created quest mods available for free.
