So much out there, not sure where to start. Mostly I'm looking for stuff that just complements the base game, nothing that changes balance/new quests/etc.. like balance Prestige classes, or some AI stuff that works well. Or camera mods, lol!
Anyone got any recommendations?

I can recommend my own OC Makeover SoZ Edition if you also have MotB and SoZ. It is compatible with TonyK's AI and only has a couple of minor documented issues with Kaedrin's PrC Pack.

What is recommended already, TonyK, Kaedrins, and Kaldors are the 3 things i'd recommend. The toys and new features, not to mention fixes, should keep you occupied for a VERY long time.
The only thing missing is the NWN2 client extension, which actually redoes how the source code of the game works, and eliminates many known bugs.
Other things are not as complete, not as polished, or are just very minor projects.
