In terms of physical appearance:
-- I'd have to eliminate all the guys ...
-- Jack's out because of no hair
-- Kelly & Samara aren't really full fledged LIs so they're out
-- You never see Tali's face so she's out ... plus the fingers & legs creep me out a little
-- Now all you have is Ash, Miranda, and Liara
-- Ash's eyes in ME1 really looked off so she gets a checkdown
-- M's butt is thrown in my face so often I don't care
That only leaves Liara ... YMMV

Miranda is the hottest by far, I'd tap Yvonne Strahovski.
But my canon got with Liara, 51% for personality and 49% for looks.

Prothean core body temperature is 68 degrees celsius. If you intend to woo me, I would suggest bringing ice packs. A lot of them. Oh, and some calm prothean music, if any of those old discs are still around. I am willing to use my tentacles in creative ways, but some places are definitely off-limit.
