They don't need to be deathstars. A kinetic impactor fired from a dreadnought class ship is capable of blasting large city-sized craters into a world. A few hits and you'll quickly be out of cities.

So at least SOME of the Protheans were processed.  It stands to conjecture that the Reapers do not need every single human alive to create a Reaper, or one of us could just kill ourselves and then the Reapers would fail in their objective.

It's entirely possible the Reapers had rejected them beforehand, as they have with the current crop of non-human species, and never bothered moving to the "Let's start work on a Larva and see how that goes" stage.

Just because the Reapers did not attempt(or succeed, even) to make a Reaper out of the Protheans does not mean that they did not see the use is using some portion of the population in the manner of the Collectors. We suffer a woeful lack of data regarding that part of the ME history.
