For ME, it's Kaiden and Wrex most of the time. Based mainly on their skills to complement Sheps'

For ME2, before Samara and Thane were picked up, I'd usually take Garrus and Grunt. Again, mainly for their skills and weapons; long / short range + ammo. Once Samara and Thane were in, they're always the two I take along because I made massive use of biotics.

For me, it was Garrus. Fit perfectly with my Infiltrator. I took down the armor, he had the shields.
I'd take Tali, who was my LI, even though it meant a rather unbalanced team, mostly because I found it cool to have the team I would have took to fight Saren if I ever had ME1 (One day...)

Mordin is my bro fo sho, always something to talk about. Garrus has potential, but he's too busy doing calibrations. Zaeed is a potential bro, but no dialogue wheel available. His stories are great though. I'm bromancing Kasumi too because the game gives me no other options.
