can you keep playing... i mean like getting to wander kirkwall amlessly and explore different areas and such... Like mass effect 2 where after the main story is over you could decide to keep playing with the same character.

i've beaten the game and when i choose to resume it just puts me back in the chantry right before my fight with the last boss so was unsure if this was possible...

No, you can't. There is an Epilogue save that leaves you in your mansion, but you can only access DLC from there.
