My suggestion? Try starting with some earlier Season 1 episodes, such as "Dragonshy", "Boast Busters", or "Griffon the Brush-Off". Those will give you a good feel for the show, both in tone and format, and are well loved. You could then try some other S1 episodes like "Winter Wrap Up", "Fall Weather Friends", "Suited for Success", and "A Bird in the Hoof". 

Lesson Zero and Party of One and Sonic Rainboom are popular to recommend, and they are some all-time favorites, but LZ  and Party of One are not really indicative of how the show usually is and Sonic Rainboom I feel requires some investment in the characters to truly appreciate, while the ones I listed above can easily stand on their own.

Mind you, when I decided I'd finally give the show a shot after seeing so many people I was friends with on here talk about the show, I just watched straight from the pilot onward (this was when only Season 1 had aired, during the summer between it and Season 2). So there's always that.

Persoanlly would have gone with rainbow dash myself, thanks to the opening theme song and how easy the two names are replaceable.

Nah. It was good, but it wasn't god-tier. I liked the songs, but only one really stands out to me. 

It just can't inhabit the same stratosphere as ACW/RoH/SR/HF/RiaW/LZ/IAT/WA.

A Canterlot Wedding, Retunr of Harmony, Sonic Rainboom, Hurricane Fluttershy.... wait.

Read it and Weep is god-tier? I was going to protest about It's About Time or Wonderbolt Academy (though Wonderbolt Academy is really good), but... Read it and Weep? God-tier? Are you an Indiana Jones fan?

This is almost as baffling as Super Cider Squeezy 6000 on bobobo's list.

SR, RoH, LZ, HF, ACW, MMC. I prefer to keep this tier as tidiest as possible.
