Leggywillow and Surely Forth state my feelings about the romance far too eloquently to justify retyping what they already said. About the only thing I can add to it is to compare it to watching a beloved tragic movie. You know how it ends. You've seen this movie before. You ache inside as it winds down to its inevitable conclusion, and maybe you'll cry. Again. It's cathartic, I guess.
I think the amount of drama a person wants out of the entertainment is a key element. If you aren't into the drama, the mixed feelings, the compeling events that are the Anders romance then it's not for you. It's a matter of taste really. Some people don't want that stuff in their entertainment because they have enough in real life. I have drama too, but I like this variety because I know I can turn it off and walk away anytime I want. It's fiction, period.

Anders is for two kinds of Hawkes: the pragmatist who can look at all that crazy and say "yeah, I can deal with that. I've got this," or the hopeless romantic who just falls head-over-heels in love. The former will probably end up seeing Act 3 as just another hurdle, part of the package they knowingly signed on for, while our innocent romantic can end up feeling heartbroken and betrayed.
I like Anders for all the reasons Surely outlined. I'm also fascinated with Justice, and their merger. The thing they have become is awesome. Dangerous, sure, but amazing; he's a whole new form of life. I want to know about that, I want to help him understand what he is, and I want to be a hero. His hero. It's so rare that we're given a male love interest who needs rescuing, but boy does he ever.
If neither supporting someone while they burn themselves out on a worthy cause nor rescuing someone from madness in order to do science to them appeals to you, then this is not your scene. And that's fine... there are a bunch of romances in bioware games that totally don't appeal to me, either. This guy is definitely not for everyone.
A nice way to break it down. In hindsight, my mage!Hawke was a pragmatisit too. Once she came to terms with the Chantry incident, what bothered her equally or even more was the lack of trust, communication and teamwork on both their parts.
I'm also facinated by Justice. The spirits of virture are the Maker's first born... If Anders and Hawke can stabalize the Vengence issue (which I think only a pragmatic romacing Hawke can help him do that), and get Anders to stop using the word "abomination", Justice could be a very powerful symbol in their cause...
