A rogue with very high defense, or a tradition S&S tank?

I did my main playthrough as a S&S tank just because it was the least frustrating, but I'm open to other ideas.

Arcane Warrior/Blood Mage, Circle Mage has the highest survivability. By my definition as "Unkillable"
Warriors come in second(You can make unkillable juggernauts from any of the setups, not just S&S)
Rogue come in Third, Combat Stealth/Feign Death/High Dex or Evasion/Dodge builds.

In actual mechanics though id rate a couple builds below.

As stated Arcane Warrior/Blood Mage. Highest Armor, Defense, and Max resists along with spell casting tactical advantages.

Pure Magic Shapeshifter Mage is tough. Especialy with Arcane Warrior.

Reaver/Templar Two-Hand Warrior thats 100% Strength Attributes and 100% Dodge/100% Spell Immune.

Reaver/Berserker Duel-Wield Warrior with Daggers and lots of Dex is pretty tough. Reaver/Templar as this build is quite a bit more survivable though.

Rogues are a mixed bag, but high dex rogues have some good survivability whether Dagger or Archery.
You can build 100% dodge rogues allright as well. Magic is still a problem.   Combat Stealth is a huge plus since you cna just stealth and then wait for your health to regen to full.

How does one get 100% dodging? How high does the defense score need to be?

You can stack + dodge/evade bonuses from gear to 100%
You also get +Evade/Dodge Bonuses from Some Talents. (Example Fade Shroud gives +25% to mages plus some other bonuses)

Defense score...120-160 Pretty much makes you unhitable except to the always hit attack some enemies have or certain enemies who have Perfect striking activated(Ser Cauthren)

The former does lock you into "Must have" gear choices though.  Its rather effective on a Two-Hand Warrior who is all damage stacked.
