I particularly enjoy the Lawful Evil alignment. Not only is it the hardest one to be successful at, it also can be the most rewarding.
Lawful Evil is, IMO, the nature of humans.
We all want something, whether it be now or in the future. As we work with others to achieve common, and sometimes selfish or selfless goals these very same goals, in turn, work for our own benefit. Lawful Evil by definition is manipulation to ones own ultimate ends without disturbing the status quo.
I also have to agree with the statement that most people whom attempt to RP as an 'evil character' dont put alot of thought into their actions, which is exactly what a Lawful Evil being would do... Calculated manipulation to serve oneself and their desires, dark or light.
In the ideology that being 'evil' means one is going to 'hurt' people, that doesnt necessarily mean it has to be direct hurting. People hurt eachother multiple times daily indirectly. Whether it be by action, word, or an misperceived gesture. There is always the potential to hurt another, being evil doesnt mean one will or that it is a pre-requisite.
How do you RP as an evil character?

Seems that the choices are more ethical vs. unethical. You could argue that it's pretty much the same as good or evil, but...
Regardless your goal is to save Ferelden/the world. By necessity you have a "good" goal, whether or not it's self serving. I see the "evil" characters in this game being more the sort that would believe "the ends justify the means / do whatever it takes to win" more than someone who would go about destroying things just for the fun of it (or other generalized/evil stereotypes). Kind of would defeat the purpose of saving the country.
EDIT: I don't think you miss out on a lot of quests and the like either. If anything you probably end up in a better (loot-wise) position because of the ability to extort people.

For my "evil" playthrough I consider a Dalish rouge.
She hates all humans/dwarves (bascially all non-elves) and will act accordingly. She will se no reason to sacrifice anything for Ferelden (ruled by humans).
(same could also hold for a City Elf - living under opression for too long - but not sure yet)
