"The Wards" from Mass Effect 1 would be a good choice.

Ok so far I've picked a couple from ME2

The Attack
Tali's Theme
Garrus' Theme
Grunt's Theme
The Galaxy Map Theme (From 1 and 2 I guess)

I'm considering the wards and to just do all collector related theme's into one medley so the attack, jump drive, unknown enemy, etc.

I really dig your covers. Have you looked at the DLC music? Namely, Arrival has some really great tunes; might go well with a rock cover.
