I think it really depends on how the player roleplays their character. There are some aspects of Shepard's personality that are set in stone, but with the morality and dialogue system there is a lot of leeway for the player to determine Shepard's overall personality. One player's canon Shep may not be the same character as another player's canon Shep.
So the most realistic pairing really depends on how the player roleplays their character. Certainly all the human options for Shepard could be realistic match, depending on how the player defines their Shepard.
Some of the alien love interests however are less realistic. Although probably the most popular romanceable character among the fanbase, Tali actually doesn't make a lot of sense. Tali could die just from being outside of suit around Shepard, let alone sleeping with him. Weakended immune system aside, her dextro-amino acid chirality could cause a dangerous allergic reaction just from being in contact with Shepard. Imagine if for example Shepard ate a few minutes before kissing Tali. Since food that is edible for humans would be levo-amino acid based, Tali's reaction might be the same as someone with a severe peanut allergy being kissed by someone who recently ate peanut butter. And of course nothing quite says "I love you" like a trip to the emergency room. If the Mass Effect univese were real I think Shepard & Tali's chances of lasting as a couple would be slim to none. There are too many obstacles.
The Garrus romance also doesn't make much sense. Besides also being dextro-amino acid based, the Turians are so alien in appearance from the humans that realistically the chances of Garrus and Fem Shep being physically attracted to each other at all are fairly slim. To Bioware's credit Garrus does kind of hint at that with his dialogue, where he stumbles in trying to compliment Fem Shep on her looks. He's drawn to her personality and not her appearance. But realistically, I don't see that romance happening.

Honestly, people that think she isn't racist need to open their eyes. She has always been the one to get toasted on Virmire, I never regret it, and I never will.

A scuttlebutt was a cask that was used to hold a ship's water supply during the age of sail. Just as people often gather around the water cooler in the modern office to gossip, sailors often swapped rumors around the scuttlebutt. Because of that the term came to mean a 'rumor,' depending on how it was used. Both usages of the word survived into the modern era and are in use in the US and Canadian navies (and the USMarine Corps), and can mean either a water fountain or a rumor.
Ashley was using military slang for a rumor, not giving Garrus or Kaidan a pet name.
