Exept by stealing the one from balista ? Their is a way craft a double-bladed one instead of a normal saber once you craft your first light saber ?
How can I get a double-bladed light saber ?

You find lightsabers (including double-bladed) as loot. Usually from guys who wield them.

*ahem* If you're willing to exploit a minor bug, you can get two of Bastila's lightsabers (one of which you'll keep for yourself obviously).
First, you must agree to kill Gadon when you encounter Kandon in the Black Vulkar base. You don't actually have to kill Gadon, simply agree to do it. When you're led out of the base by Kandon, go back in and steal the prototype accelerator as you would have before.
Then go to the Hidden Bek base and speak to Gadon's bodyguard. Tell her you have the accelerator, do the swoop race, and kill and loot Brejik as usual. Once you can control your character again, go back to the Bek base and speak to Gadon's bodyguard again - you'll end up back at the swoop race entrance area, and you can loot Brejik once again for another lightsaber (and another set of his equipment).
And there you have it - a double-bladed lightsaber of your very own, and you don't even have to wait until Tatooine or Kashyyk to get it.
