I don't judge people automatically for what religion they believe in.
I may disagree with their religion, but everyone believes for different reasons.

in jewish tradition, you are jewish if your mother is jewish. only maternal bloodlines really matter. so yes, with a name like Williams she could still be Jewish. (not to mention - you CAN convert into Jeudaism, you know). she certainly has the nose for it
that said - masl tov? Ishala? Namaste? what do you say as a pagan exactly?
in other words - Ash is still Ash, what does it matter which denimination her religious beleifs are?

Yeah that. People assume she's Christian because what detail we can glean about her beliefs best matches modern Christian culture and theology (and modern Western culture in general, since she's into Tennyson and Wordsworth and not, say, Sarojini Naidu). It's not people just randomly pulling a monotheistic religion out of a hat.
(That said, I'll also echo the "so what." I like her faith, but I like it because it's faith, not because of what specific faith it is.)

Ashley having the surname Williams doesn't necessarily mean she isn't Jewish.
Williams of course is an English name but many people in the Mass Effect universe are mixed, and Ashley does have a lot of mediterrenean features. For all we know she could have partial Israeli ancestry from her mother's side of the family.
Or she might not, but it can't be automatically ruled out.

Serious answer: so the hell what? She can be Pastafarian for all it matters. Sheesh people!
Not serious at all answer: If she's Jewish, then she'd better install a mikvah on the Normandy. If she's Muslim, ask her which direction Mecca is when they're going FTL. If she's Hindu, well I'd feel better about leaving her on Virmire, as maybe she'll be reincarnated as a Quarian. If she's Pagan (besides the fact that there is no Church of Pagan - there are a ton of Pagan faiths), well hope she's down with Bacchus or Aphrodite, and that she doesn't go all Sekhmet on Shep's arse.

Israeli ancestry or semitic features =/= Jewish. There are Christian and Muslim Israelis, so country of origin means nothing. There are Ethiopian Jews, so features don't mean anything.
It's rather interesting that the most "prejudiced" character receives scrutiny based on our modern world prejudices. That's actually a good thing, that a character can spark debate and offer reflection on "real world" issues.
