So I've had NWN2 in my games library for years now and decided to get round to playing it. I play DnD 4e regulary with a group but have never played and 3.5e. So I really wanted some help in rolling a simple dual wield class to play through NWN2 with. Any help would be much apreciated, would be looking for probably an elf character as I play an Eladrin with my group. Thanks

For the OC? Simple? I guess Ranger would do. Obviously dual-weapon traning. Pick Favoured Enemy: Undead and the Improved FE:Undead feat.
Wood Elf, 18 Str & 18 Dex. All bonus points every 4 levels go into Str. Wear Chainshirt (eventually mithrall). Use light offhand weapon.
If you're looking for details, I'm sure here you can find something that would suit you're taste:

I had a look on there and as nooby as it sounds I couldnt really get to grips with the short had they use on there for instance a OC dual wield build that is suggested has this - Ranger (13), Fighter (4), Bard (2), Shadowdancer (1) now how do you go about incorperating those three classes at the start in character creation? I know that the shadowdancer is a prestige class though

You don't. You pick your first class and every time you level up, you can change the class you're gaining a level in. So in practice this means this build has 13 levels in Ranger, 4 levels in Fighter, 2 levels in Bard and 1 level in Shadowdancer. Please note that Prestige classes (like Shadowdancers) have certain requirements which must be met before you can gain a level in that class. And also the levelling order can be pretty important in character building.
Hmm... looks like the build you mentioned may have a multiclassing penalty, because it's base classes (Ranger, Fighter and Bard) are more then 1 level apart. Two base classes can usually be far apart, as a "favoured class" of the chosen race ignores this restriction. But 3 different base classes with a wide level spread might incure a 20% xp penalty (or 40%, if none is favoured),
