If I beat ME2 and continue to play in order to finish the last remaining assignments, will I still be able to import the results from completing those assignments or does only what I finished before killing the Human Reaper count?Or I think the better question is what ME2 save file counts when importing it into ME3?

Any save file with the "completed ME2" flag will be a valid file to import into ME3. Unlike ME2 doesnt create a specfic "end game" save like ME1 does.
In other words, go ahead and do whatever you want after the SM, it will still count as a valid file to import.
