More quotes:
GAMES
"YOU EXIST BECAUSE WE ALLOW IT. AND YOU WILL END BECAUSE WE DEMAND IT." - Sovereign Mass Effect
Liara: "So tell me what you want. What are you fighting for?"
Shepard: "I guess I'm fighting for us: all of us."
Liara: "That's a lot of responsibility."
Shepard: "People are messy, awkward, sometimes selfish and cruel. But they're trying, and I'm going to make sure they have a chance." - Mass Effect 2
EDIT: I'd just like to say that the above quote is my favorite from a Paragon Shepard. It just sums his/her character really well without any cheap moralizing.
Mario: "Laa shaya waq'in moutlaq bale kouloun mounkine."
Machiavelli: "Where other men blindly follow the truth, remember:"
Ezio: "Nothing is true."
Machiavelli: "Where other men are limited by morality or law, remember:"
Ezio: "Everything is permitted."
Machiavelli: "We work in the dark to serve the light. We are assassins."
All: "Nothing is true. Everything is permitted." - Assassin's Creed 2
"There is no emotion, There is peace.
There is no ignorance, there is knowledge.
There is no passion, there is serenity.
There is no chaos, there is harmony.
There is no death, there is the Force." - The Code of the Jedi, Star Wars: Knights of the Old Republic
"Peace is a lie, there is only passion.
Through passion, I gain strength.
Through strength, I gain power.
Through power, I gain victory.
Through victory, my chains are broken.
The Force shall free me." - The Code of the Sith, Star Wars: Knights of the Old Republic

Alan Wake
"Stephen King once wrote that "Nightmares exist outside of logic, and there's little fun to be had in explanations; they're antithetical to the poetry of fear." In a horror story, the victim keeps asking "Why?" But no explanation is given, and there shouldn't be one. The unanswered mystery is what stays with us the longest, and it's what we'll remember in the end.

Darth Vader: Impressive. Most impressive. Obi-Wan has taught you well. You have controlled your fear. Now, release your anger. Only your hatred can destroy me.
Darth Vader: Apology accepted Captain Needa.
Luke: I am a Jedi. Like my father before me.
Captain America: (First part taken from Mark Twain)
For in a republic, who is "the Country"? Is it the government which is
for the moment in the saddle? Why, the government is merely a temporary
servant: it cannot be its prerogative to determine what is right and
what is wrong, and decide who is a patriot and who isn't. It's function
is to obey orders, not originate them. Who, then is the country? Is it
the newspaper? Is it the pulpit? Why, these are mere parts of the
country, not the whole of it, they have not command, they have only
their little share in the command. In a monarchy, the king and his
family are the country: In a republic it is the common voice of the
people each of you, for himself, by himself and on his own
responsibility, must speak. It is a solemn and weighty responsibility,
and not lightly to be flung aside at the bullying of pulpit, press,
government, or the empty catchphrases of politicians. Each must for
himself alone decide what is right and what is wrong, and which course
is patriotic and which isn't. You cannot shirk this and be a man. To
decide it against your convictions is to be an unqualified and
inexcusable traitor, both to yourself and to your country, let men label
you as they may. If you alone of all the nation shall decide one way,
and that way be the right way according to your convictions of the
right, you have your duty by yourself and by your country. Hold up your
head. You have nothing to be ashamed of'.
Doesn't matter what the press says. Doesn't matter what the politicians or the mobs say. Doesn't
matter if the whole country decides that something wrong is something
right. This nation was founded on one principle above all else: The
requirement that we stand up for what we believe, no matter the odds or
the consequences. When the mob and the press and the whole world tell
you to move, your job is to plant yourself like a tree besides the river
of truth, and tell the whole world----No you move.

"The legionary Titus Pullo is a hero of the 13th Legion, but look at him now! Justice knows every man's number. He has committed a terrible sacrilege and he will pay for it with his life, as will any man here who breaks the law. Brawlers and drunkards will be flogged, thieves will be strangled, deserters will be crucified!

Mark Antony: You have a brain, or so the tribunes say. So tell me, if you had to retrieve Caesar's Eagle, how would you go about it?
Lucius Vorenus: I'd take captives from every tribe in Gaul and crucify them one by one until someone tells me where the Eagle is. Then I'd go in quick and quiet with one of two men and steal it back.
Mark Antony: Good. We are of one mind. Do it!

Andrew Ryan: I'm here to ask you a question. Is a man not entitled to the sweat of his brow? 'No!' says the man in Washington, 'It belongs to the poor.' 'No!' says the man in the Vatican, 'It belongs to God.' 'No!' says the man in Moscow, 'It belongs to everyone.' I rejected those answers; instead, I chose something different. I chose the impossible. I chose... Rapture, a city where the artist would not fear the censor, where the scientist would not be bound by petty morality, Where the great would not be constrained by the small! And with the sweat of your brow, Rapture can become your city as well.

There is no passion, there is serenity.
There is no chaos, there is harmony.
There is no death, there is the Force." - The Code of the Jedi, Star Wars: Knights of the Old Republic
This quote predates KotOR, it's in West End Games' Star Wars RPG (the Rule Book), though it might be from an earlier source (Tales of the Jedi comics?).
I've posted enough movie quotes in other threads, so I'll add another game quote:
Well I, for one, plan on discovering the secrets of the multiverse by rubbing cottage cheese on my belly and eating vast quantities of fresh-water fish. Mmm... cheese. -The Nameless One in Planescape:Torment.
