Probably because BW still gives their aliens human skeletons. Grunt looked like a fvcking doofus when he would run for the same reason. I don't know why they don't just make their own skeletons for turians and krogan.
In Liara and Garrus' case: I think it's because only their legs are moving in the vid. No shoulder movement for example will make a running creature look really weird/stiff.

There will probably be some BioWare Pulse episodes, interviews filtering in from various games media sources that are attending GamesCom, and on Saturday, there's a ME3 presentation scheduled that will be streamed, iirc. Chris Priestly mentioned that event here:

Yeah, it looks stiff, but it's nothing new. I highly doubt it would ever change.

And btw, that crush is a bit lame with the current plier hand of the Atlas:

See, the two ends of the pincer are bent so they meet again behind Liara's bum. And Liara is still pretty much alive in that image, struggling to get out of the mech's grip. What I want to say is, the two pincer ends cannot grip harder after they meet, and there's only a few inches of space between the two in this picture. This way, no one could be really crushed by that hand. Of course, they'd feel rather unpleasently as it still presses their bodies pretty hard, but not to the point to kill someone. I don't know why couldn't they go with the Ogre grab and punch animation. Or at least change the Atlas' hands to a more suitable crushing tool.

It's a heavily edited trailer. The actual gameplay videos that we've seen didn't look as if combat occured at significantly faster pace than ME2.crackseed wrote...
I really do hope they'll take some time to fine tune the animations. In addition to the stiff character models atm [I don't remember it looking THAT off in ME2 personally] - I feel like the sped-up combat pacing feels really...artificial and strange. It's too fast. It's like the devs got together and said "We need to increase the speed and flow of combat!" "Ok, to what level?" "LUDICROUS SPEED!"
