But then that might imply that Kitty in DA:O was a shared illusion. I think with her, shapeshifting was involved. If you have the mabari in the party, he growls at Kitty, but faces her at what would be eye level for an animal, not a human. Well, in the Circle Tower, the desire demon you encounter with the templar seems to have him under a trance and he believes he is with his wife or something. So, I would imagine that the desire demons don't much change shape as they make you see whatever they want you to see.
I would think that the mental illusion is the first tactic used and it supercedes any actual change in physical appearance. But I think they have to dabble in the latter to better ensure their survival.

I think it might be more psychological - rather than physically appearing as what you want, maybe the Desire Demon just influences your mind to make you believe that you want her? Though I'm curious now what a male Desire Demon would look like... hrm!

Edit: Then I suppose they can bewitch a person and make them see something that isn't there or change their form to become something else.

But then, I always got a little Bubblegum Crisis vibe whenever demons were around - particularly those disguised as something else. They reminded me of Boomers somehow crammed into normal-looking human shells, who would suddenly puff out and become some metal killing machine.
(not the best clip to exemplify, but the only one I could find on short notice)

You will probably get your wish TC. I remember Dave Gaider himself threatening to include an "incubus"-styled Desire Demon because people were complaining about this very issue. Well, he threatened the people opposed to scantily-clad men. But anyway, it'll probably show up in DA3, so all you need is a little patience and your wish will be fulfilled. Probably.
